Healthy Organic Date Balls

This is a very different post than what I normally talk about or review. It's a post about one of my all time favorite recipes for Healthy Organic Date Balls.
 
I have been eating healthy and everything organic for over a year now. I also stopped eating meat and all things made with animal products, it's a bit of a endeavor but am totally loving every moment of it. I juice a lot of fresh fruits and veggies most of the time.
Raw and Organic... it's the way to go!!!
 
Here is the recipe for:
 

Healthy Organic Date Balls.
 
1 bag of Dried Pitted Dates
2 Tbsp Organic Coconut Oil
2 cups of Ground Flax Seed
1 and 1/4 cups Fine Ground Almonds (set aside 1/4 cup in a bowl) PS. I grind my own Raw Whole Almonds in a food processer.
2 tsp. Organic Vanilla Extract
1 cup Organic Oatmeal
2/3 to 1cup Water
 
Cut up the dates in small pieces, put in pot, add 2/3 to 1cup of water and 2 Tbsp of Coconut Oil. Cook until mixture is thick and sticky, stirring continuously. Take off burner and let cool for 10 min. Add 2 tsp of Organic Vanilla and stir into Date mixture. Add 1 cup of Organic Oatmeal, 1 cup of Fine Ground Almonds, 2 cups of Ground Flax Seed and mix in with date mixture. This mixture will become thick and sticky. Form into small balls, roll lightly in a bowl of 1/4 cup Fine Ground Almonds and place on a flat surface such as a cookie sheet or plate and then set in fridge for about an hour. Then enjoy!!
This makes about 45-50 small Date balls.
No cook!
 
This is fast and simple, and a great sweet treat for those of us who don't like to eat cakes or cookies, but like something sweet once in the while and still have something healthy.
